Invitation to Rawfood Paradise: with the most decadent raw vegan chocolate cake ever

[vc_row][vc_column][vc_column_text]Have you ever tried to find raw vegan recipes for your friends or family not eating raw? I found that what for me is rawfood paradise would hardly convince any non-rawfoodist to even try it.

This decadent RAW chocolate cake yet is what i shared with my family last christmas, and they really loved it!

Here it is: the ultimate raw vegan chocolate cake recipe [/vc_column_text][vc_empty_space][/vc_column][/vc_row][vc_row][vc_column width=”1/2″][vc_column_text]Ingredients (enough for 25 pieces like shown on photo):

Crust:

– 1 cup cashews (i buy these)
– 1.5 cups dates (try deglet for this)
– 0.5 cups dried figs ( these are best)
– 1/2 tsp Ceylon cinnamon

Filling:

– 2 cups cashews
– 26 very soft big medjool dates (i used these )
– 1 cup raw coconut oil
– 1 cup raw cacao powder
– 1/2 cup water
– 1 tsp vanilla

Besides, you will need a power mixer like the Vitamix and a cake ring (square works best for cube pieces like on photo)[/vc_column_text][/vc_column][vc_column width=”1/2″][vc_single_image image=”20180″ img_size=”full” css_animation=”fadeIn”][/vc_column][/vc_row][vc_row][vc_column][vc_empty_space][vc_column_text]Preparation:

Crust:

Pit the dates, add to your Vitamix. Add cashews, figs and cinnamon and process until you get a dough.

Sprinkle coconut flour or coconut flakes on a big plate in order to prevent your cake from sticking to the plate. Place your cake ring, put dough inside and form the crust.

Filling:

Pit the dates. Melt the coconut oil at 40°C (106°F) max.
Add all ingredients to your Vitamix.

In case your medjool dates are not that soft, you can soak them in water for 4 hours. Only add enough water to cover the dates, and add this water to your Vitamix, too. In this case, you would like to skip the extra water in recipe first and only add it little by little if needed.

Blend all until smooth. This will be hard work for your mixer, so take care it’s not overheating. Take breaks every 30 to 40 seconds and wait for a moment before mixing on. This will also prevent the chocolate cream from getting hot – after all, we want to keep this a RAW cake. 😉

Sprinkle the chocolate cream on the crust and let sit in fridge for a few hours.

Then, you can remove the cake ring and cut your cake. 

Decorate with coconut flakes and goji berries.[/vc_column_text][vc_empty_space][/vc_column][/vc_row]
