Homemade Raw Coconut Butter

Finding amazing fresh, ripe coconuts in the local health store last week provided me with the opportunity i had been waiting for for a while: to try out making my own raw coconut butter. From fresh coconuts. Much lower in price than the store bought one, really raw for sure, and mainly as fresh as possible!

It’s really easy – this is how i did it:

For a small jar (approx. 250g) i used three middle sized fresh ripe coconuts.
Open the coconuts, get the pulp out and (optionally) peel of the thin brown skin. You can keep it, it’s absolutely edible and healthy. Only, your coconut butter will be slightly brown instead of clear white. Your choice 😉
Roughly chop the coconut and grate it (e. g. using a power mixer).
Dehydrate the grated coconut for 6-8 hours at 40°C (104°F) or less.
Put the dehydrated coconut flakes in your mixer or blender and blend for 1 to 2 minutes. This one is very fast, much easier than making nut butter. Nevertheless, you will want to stop in between to make sure the butter (and your blender) does not get to hot.

Fresh like this, the coconut butter is creamy. It will set when cooling down.
