A simple raw food dinner recipe, easy and fast to prepare. And you don’t need a blender for it!
Ingredients (serves one):
- one zucchini, choose the size according to your appetite
- 2 roma tomatoes (or other tomato variety of your choice)
- 1/2 avocado
- 1 tbsp raw pumpkin seed butter
- raw nori flakes
- 1-2 tbsp water
- optional: 1 clove of garlic
- optional: spices of your choice
Instructions:
Use a peeler to cut the courgette into thin strips. These are your tagliatelle. Alternatively, you can spiralize them to spaghetti.
With a fork or a spoon, mix the pumpkin seed butter with a little water and optionally finely chopped garlic to a light cream and mix the “noodles” thoroughly with it.
Cut the tomatoes and the peeled avocado into cubes and add them to the pasta.
Arrange nicely on a plate, sprinkle with nori flakes and spices if desired – and enjoy.
Tips:
I like the slightly spicy taste of pure pumpkin seed butter. Of course, you can also use another nut or seed butter of your choice instead.
Try sprinkling with other varieties of seaweed flakes or with fresh, finely chopped herbs.
