Quick Dinner: Zucchini Baguette

Greens, lettuce, seaweed, veggies … i have them every day. Yet, mixed salads, every chopped up and mixed in a bowl – i don’t like that.

Fortunately, there are sooooo many varied ways to enjoy vegetables and greens. Like these baguettes, perfect for a quick dinner.

Enjoy them at the travelling raw food café – or just try them yourself at home.

What you need (f 1 person):

  • 1 mid-size zucchini
  • tomatoes, lettuce, microgreens, bell pepper, seaweed, sprouts, … whatever you like to top your baguette with
  • 1-2 tablespoons of your favourite dip or spread. (You will find many more new recipes for dips, spreads, sauces in my soon-to-come new recipe ebook, so stay tuned!)


Instructions:

Cut of the ends of the zucchini and then cut it lengthwise into slices. These are the base for your baguettes.

Cut the toppings into slices or strips.

Spread some of the dip on the “breads” and top with the prepared ingredients.

Enjoy!
